Have plans to watch the Oscars? Some years we do but we're not devout watchers. When I do watch, it's usually to see the host. I'll check in periodically to see Alec Baldwin and Steve Martin's antics.
If you need a sweet treat to compliment the event, here is a fast and easy dessert guaranteed to UPlift your spirits!
UPlifting Banana Cream Shortcake
Ingredients
- Bisquick Shortcake Recipe (minus the strawberries & 1/4 c sugar)
- banana flavored instant pudding mix
- 1 1/2 cup milk
- 1 or 2 ripe bananas
- 2 cups powdered sugar
- 1/2 tsp vanilla extract
- 1 tsp water or milk
- chocolate bar (milk, semi sweet or dark) optional
Mix banana flavored pudding mix with the milk for 2 minutes. Cover in plastic wrap so the wrap touches the top layer of pudding and refrigerate approximately 20 minutes till set.
Slice your bananas then quarter into bite sized bits. Mix powdered sugar, vanilla extract, and enough water or milk to form the icing. Start with 1/4 tsp and work your way up to 1 full tsp. A little liquid goes a long way with powdered sugar.
Build your shortcake. Cut the shortcakes in half. Spoon a thick layer of banana cream mixture onto one half of the shortcakes. Sprinkle with generously bits of banana. Place the shortcakes tops over the banana filling. Drizzle icing over the top. Use a cheese grater or vegetable peeler to shred or shave chocolate for garnish.
