Sweet n Spicey Baby Carrots

Today's recipe is not one I cooked last week. To be perfectly honest, I didn't do much cooking with a sinus infection brewing and my uncontrollable desire to play with my new sewing machine! Today's recipe is something I made a few weeks back but now I give you...

Sweet N Spicy Baby Carrots
.

This is very easy to make and requires only four ingredients! I love the sweet and spicey flavor of this dish but it was a little too much for J-Man but Wild Man couldn't get enough!

Ingredients
Baby Carrots
Can of Chunk Pineapple w/juice
Spoonful of Honey
Cayenne Pepper or Paprika

Directions
Cook baby carrots, honey, cayenne pepper (or paprika) and some of the pineapple juice on medium heat. When carrots are almost done and the pineapple juice has cooked down, add in pineapple till warmed thoroughly. The juice will turn to a glaze once it starts to cool.

Jenn's Tips: As usual the amounts will vary with the number of people you're feeding. I only used a half can of pineapple with three quarters of a small bag of baby carrots. If you want more spicy than sweet, add a dash more pepper. If you want more of the sweet flavor, then add a little more pineapple.
