Easy No-Bake Cheesy Cake

Here's a quick and easy cheese cake recipe.

Ingredients
  • 1 8oz package cream cheese softened
  • 1 package instant pudding desired flavor
  • 1/2 cup milk (more or less)
  • 1 tub cool whip desired flavor
  • 1 graham or vanilla wafer pie crust
  • 2 bags of frozen berries-thawed
  • 1/2 cup sugar

For Pie Filling
On medium-low speed beat softened cream cheese, instant pudding, adding enough milk that mixture is thick. Fold in cool whip till evenly mixed. Spoon mixture into pie crust and place in refrigerator till ready to serve. (Tip: The thicker the mixture, the better it will hold up after sitting out during a dinner party.)

For Berry Topping
Puree one bag of berries in blender, food processor, magic bullet, etc. In saucepan, add sugar and heat over medium heat till thickened and bubbly (about 20 minutes). Allow sauce to cool. Leave as is or add another bag of thawed berries. (Personal note: I used strawberries for my sauce and a mixed berry variety as the mix in.)

Pie Crust How To
You can also make your own graham cracker or vanilla wafer pie crust rather easily. Puree vanilla wafers or graham crackers in your blender, food processor or magic bullet. Then add enough melted butter to form a dough-like mixture. Press the mixture evenly in your pie plate and refrigerate a few minutes to set the crust. The size of your pie plate will determine how much of the two ingredients will be needed.

This recipe easily converts to cupcakes too! So what simple sweet treats will you make?
