Breakfast Strudel

I made the yummiest breakfast strudel this morning using the last bit of deer sausage links we got from a friend. Hubby wasn't too keen on the deer sausage but I didn't want to throw it out. I needed to make something my family would enjoy. What's the sense in cooking if no one likes what you make? The strudel seemed like a good way to accomplish my goal. In the recipe below, I cooked my links in a frying pan with a little water, allow the water to cook off and chop my links into bite sized pieces. Read on for the rest of it!Breakfast Strudel

Main Ingredients 

  5 Eggs beaten

  2 cups quick cooking oats

  1 cup water

1/2 cup powdered milk

  1 tbs salt

  1 tbs pepper

  1 lbs cooked crumbled meat (sausage, bacon, etc)

Strudel Topping

1/4 cup brown sugar

1/4 cup flour (all purpose or self rising)

  2 tbs granulated sugar

  2 tbs melted butter

Preheat over to 400. Whisk water, dry powdered milk, salt and pepper into the beaten eggs until all ingredients are mixed well and powdered milk is dissolved. Stir in oats and pour into greased 8x8 pan. Sprinkle meat in the pan. In separate bowl, stir brown sugar, flour, and granulated sugar with a fork till sifted together. Mix in melted butter till crumbly. Sprinkle on top of egg and meat mixture. Bake 20-30 minutes till center is slightly moist (not wet).

Jenn's tips: Don't line your pan with foil-the egg sticks even if you grease it: lesson learned the hard way! ;) Substitute oats for bread crumbs, almost stale sliced bread, bread loaf ends, croutons, rice, etc. For a less a sugary dish, top with cheese instead of strudel topping. Add onions (minced or chopped), garlic, oregano, red pepper flakes, or other spices for a more savory taste!
